Pakhala is a special Odia dish which is made up of cooked rice washed or little fermented in water. The beauty and specialty of this dish is that it is one of the prime dishes in Odisha and is consumed by people from all communities and social status with equal fervent and reverence. Although it has its own versions in Bengal and Jhardkhand – the original Pakhala bhaat is a special dish meant for the summer time.

In Bengal it is known as Panta Bhaat, in many other places the dish is known as Paani Bhaat because of its liquid texture.
